Chicken breast meat (white meat) is considered healthy, as it contains a minimum amount of cholesterol, various groups of vitamins and minerals. Therefore, nutritionists recommend including white meat in the diet. Chicken breast cooks quickly, but the meat is often dry. Chicken rolls with filling are exactly the option when the white meat turns out to be juicy and tasty.
It is necessary
- To prepare the base:
- - chicken breast fillet - 3-4 pcs.;
- - olive oil 1 tbsp. l.;
- - salt to taste;
- - ground black pepper - a pinch;
- - hops-suneli;
- - cling film;
- - toothpicks.
- For filling:
- - Basmati rice - 100 grams;
- - pine nuts - 0.5 cups;
- - almonds (petals) - 0.5 cups;
- - raisins - 0.5 cups;
- - greens to choose from (spinach, green onions, basil, cilantro);
- - salt and pepper to taste.
Instructions
Step 1
Let's prepare the filling for the chicken rolls. Pour about 0.5 liters of water into a small saucepan and put on the stove. When the water boils, add salt and gradually add the Basmati rice. Reduce heat and continue cooking over medium heat. During cooking, do not forget to stir the rice with a spoon. Then we throw the cooked rice grains into a colander to drain the water. Dry the rice a little in a preheated frying pan, transfer it to a plate and leave it to cool.
Step 2
Now let's prepare the next filling ingredient - nuts. Preheat the pan and pour in the olive oil. For several minutes, fry pine nuts and almond petals over high heat until golden brown. Make sure the nuts are not burnt and stir them vigorously with a wooden spatula.
Step 3
Grind the greens in a blender or with a knife. Pour boiling water over the raisins and leave for 10 minutes.
Put chilled nuts, dried rice, raisins, chopped greens in a large bowl. Add freshly squeezed lemon juice and some olive oil. Mix everything thoroughly. The filling for the rolls is ready!
Step 4
Lay the chicken breast fillet on a wooden cutting board and roll it into cling film. Gently beat them off with a hammer to beat the meat, so that you get an even layer that needs to be salt and pepper.
Place the filling in the middle of the chicken breast and roll it up to make a roll. We fix it with a toothpick.
Step 5
Gently fry each chicken roll on all sides in a skillet with butter. Put baking paper on a baking sheet and move our rolls. Lubricate the top with a mixture of olive oil, lemon juice and suneli hops. Bake in a preheated oven to 220 degrees for 20 minutes. Cut the finished roll into portions. Serve a dish with fresh herbs and / or vegetable salad.
