Sweet, juicy, bright oranges are ideal for making juices, jams, jellies and various desserts, but their culinary uses are not limited to this. Oranges are also used in salads, sauces, marinades. Usually, just a few fruits are enough to prepare various dishes, but it so happens that you have many more oranges at your disposal than you are used to using, and then you need completely different recipes.

Orange jam

The easiest way to use large quantities of oranges is to make jam with them. You will need:

- 1 kg of oranges;

- 100 ml of lemon juice;

- 2 kg of sugar.

Wash the oranges under running water. Cut each fruit in half and squeeze out the juice. Using a spoon, scrape all the pulp from the fruit together with the seeds and cover with water. Cut the orange peel into pieces and place in the juice. Leave it on for 10-12 hours.

Pour the juice with the peel into a saucepan, pour over the infused orange water. Tie the pulp and seeds in a bag of gauze or muslin and place also in a saucepan. Bring to a boil and simmer for 2-3 hours, until the rind is tender.

Remove the bag from the pot, strain the contents through a sieve and measure. You should have about a liter of liquid. If it is less or more, proportionally increase or decrease the amount of sugar and lemon juice. It should be 1: 1: 10, where the first two digits are boiled orange juice and sugar, and the last is lemon juice.

Combine sugar, boiled orange juice and lemon juice, add rind and bring to a boil. Skim off the foam, reduce heat, and simmer the jam until a drop of it solidifies on the porcelain saucer. Pour the finished jam into sterilized jars.

Orange khir

Khir is a type of Indian milk-based sweets. Prepare it with oranges and enjoy the unusual taste and color of the dessert. Take:

- 1 liter of milk 2.5% fat;

- 10 medium oranges;

- ½ cup chopped cashews;

- 2 tea boats of ground cardamom;

- sugar to taste.

Bring the milk to a boil and simmer until it is half cooked. Add some sugar, cardamom, and chopped nuts.

Peel the oranges, remove the seeds and chop the pulp. Add it to slightly cooled milk, stir and refrigerate. Serve the khir cold.

Cod with oranges

Oranges are a great addition not only to juicy meat dishes. But also for delicate fish. Prepare tender cod with oranges. For this dish you will need:

- 4 cod fillets;

- 4 large oranges;

- 1 head of red onion;

- 1 tablespoon of olive oil;

- salt and pepper.

Peel two oranges by cutting off the peel with a thin knife along with the upper membrane. Using the same sharp and thin knife, cut the flesh out of the fruit in neat segments. Squeeze the juice out of the remaining fruits.

Heat oil in a large skillet over medium-high heat. Chop the onion in half rings. Fry the onion, stirring occasionally, until transparent and place on a plate.

Increase heat and sauté cod fillets seasoned with pepper and salt in the same skillet. Cook for 3-4 minutes on each side. Place on serving bowls.

Return the onion to the skillet, pour in the orange juice and bring to a boil, cook until the sauce is halved. Add the orange slices, heat and pour the seasoning over the fish. Serve to the table.
