To prepare aromatic coffee in a Turk for 1 portion you will need:

Finely ground coffee - 2 tsp;

Filtered or bottled water - 100 ml.;

Cane sugar - 1 tsp;

It is advisable to take coffee in Arabica beans. When brewed in a Turk, it does not give a tart bitterness and has a more pronounced aroma than robusta coffee. The water should be either bottled or filtered so that impurities do not interfere with the true taste of freshly brewed coffee. Salt is an essential ingredient, unlike sugar. It will help the coffee release its essential oils when brewing. At the same time, the salty taste in the drink will not be caught at all.

So, coffee should be ground in a coffee grinder to the consistency of powdered sugar. Or take ready-made finely ground coffee. Pour cold water into a Turk, add 2 teaspoons of coffee, 1 teaspoon of sugar and salt on the tip of a knife. Stir thoroughly so that the salt and sugar disperse as much as possible, since it is strictly forbidden to stir during brewing and after coffee. The main nuance, the content should not be higher than the place where the narrowest part of the Turk begins.

After that, the Turk should be put on medium heat so that the coffee gradually warms up. As soon as the temperature of the water approaches a boil, a foam will begin to form. Only then reduce the fire to a minimum. At this moment, it is better not to leave the stove and not be distracted by extraneous matters. Further, as the foam reaches the top of the Turks, it should be removed from the heat and the coffee should be allowed to “rest”. If desired, for the first time, some of the foam can be drained into a cup. As soon as the foam settles, the Turk with coffee must be returned to the fire. This process must be repeated 3-4 times. The main thing is not to let the coffee boil. Otherwise, the drink will have an unpleasant rancid aftertaste. The approximate brewing time for coffee in a Turk should be from four to five minutes.

After that, turn off the stove, and pour 1 teaspoon of ice water into a Turk with freshly brewed coffee and leave for 1 - 2 minutes. Due to this action, the grains of coffee, which rose during brewing, will begin to settle to the bottom faster. In the meantime, the prepared coffee cup should be warmed up or rinsed with boiling water. Be sure to wipe dry. Only after that, carefully, without loosening it, you can pour the coffee from the Turk into the cup.

Coffee prepared in this way and in the absence of filtration turns out to be not only aromatic, but also very strong. Therefore, it should be served with a glass of cool water, so as not only to level the strength, drinking it if necessary, but every subsequent sip was like the first.
