One of the oldest ways to make coffee is to brew it in a special vessel called a turka. It is not difficult to make coffee in a Turk, but this method has a number of features.
Instructions
Step 1
Pour the amount of cold water necessary for cooking into a Turk and place on the stove, turning on the slowest heat. Then add 2 teaspoons of ground coffee to 100 milliliters of water. The coffee must be poured so that it remains on the surface of the water, in no case mixing with it. During the heating process, the ground coffee will sink to the bottom and brew as hard as possible. You can immediately add a small amount of sugar to cold water, to taste.
Step 2
Simmer the coffee until it starts to boil. Boiling coffee will begin to break through the coffee shell formed on the surface of the water. As soon as you see the first signs of boiling coffee, immediately remove it from the heat. The water in which coffee is brewed should never boil, since the optimum temperature for brewing coffee is 92-94 degrees. After removing the drink from the stove, let it cool down a little, then repeat the procedure: put the Turk back on the stove and wait for the water to boil, then immediately remove the coffee from the heat. Do this three times.
Step 3
Coffee brought to a boil three times is completely ready to drink. After that, it can be poured into cups. The cup in which the coffee is served must be well warmed up so that the drink does not lose its taste and aroma from a sharp temperature drop. You can heat the cup under running hot tap water. The froth formed on top can be spread over the cups and then poured over with coffee.
