It is necessary

  • - a frying pan with a lid;
  • - skimmer;
  • - pork tenderloin 1.5 kg;
  • - ripe apricots 200 g;
  • - rosemary 2 teaspoons;
  • - honey 2 teaspoons;
  • - water 1 tbsp. the spoon;
  • - salt;
  • - ground black pepper;
  • - vegetable oil 2 tbsp. spoons;
  • - butter 50 g.

Instructions

Step 1

Wash the pork well, cut into large oblong pieces no more than 5 cm thick. Beat the pieces lightly on both sides. To avoid damaging the fibers of the meat, it is better to beat through cling film.

Step 2

Combine rosemary with salt and pepper and mix well. Rub the medallions on both sides with the seasoning mixture. Leave the meat in the spices for 40 minutes.

Step 3

Wash the apricots and remove the seeds. Cut their flesh into quarters.

Step 4

Heat vegetable oil in a frying pan and fry the medallions on both sides, this will take about 5 minutes. Then reduce heat and simmer, covered, for another 10 minutes. Remove the finished pieces from the pan.

Step 5

Melt the butter in the same skillet. Add apricots and honey to the pan. Fry the fruit and honey over medium heat, stirring continuously for 2 minutes. Use a slotted spoon to remove the apricots from the pan.

Step 6

Place the meat in a skillet with apricot caramel and fry for about 10 minutes over high heat. Serve with caramel and apricot garnish.
