Step 1
Rinse the turkey medallions, dry, sprinkle with a mixture of salt, pepper and garlic, mix well so that the mixture is evenly distributed over the meat. Cover the turkey with a saucer, put a small load on top and put the meat in the refrigerator for several hours to marinate.
Step 2
Squeeze the juice from the lemon and orange halves. Cut part of the lemon and orange peel into very thin strips - all you need is 1 teaspoon of crushed peel, which must be scalded with boiling water and cooled. Cut the onion into small cubes, also scald and cool. Mix blackcurrant jam or preserves with mustard, wine, citrus juice, add onion and zest, mix well. A little salt can be added to taste if desired.

Heat vegetable oil in a frying pan. Place the marinated turkey medallions and fry until golden brown on each side for 7-8 minutes. Put on a plate, pour with blackcurrant sauce.
