Ingredients for the biscuit roll:

  • Butter - 20-30 g;
  • Starch - 3 tablespoons;
  • Fresh carrots - 4 pcs;
  • Sugar - 0.5 tbsp;
  • Flour - 3 tbsp;
  • Chicken eggs - 3 pcs.

Ingredients for the filling:

  • Sugar - 7 tsp;
  • 10% cream - 100 g;
  • Lemon zest - 1/2 citrus;
  • Cottage cheese - 200 g.

Ingredients for the sauce:

  • Sugar - 3 tsp;
  • Juice from 1 orange;
  • Starch - 15 g.

Preparation:

  1. First of all, we proceed to the biscuit. We wash, clean and finely rub the carrots. Then simmer it slightly in butter (15 minutes is enough).
  2. While the carrots are being prepared, carefully grind the sugar with egg yolks. Add flour and starch, then beat vigorously again. In a separate bowl, we achieve the elasticity of the proteins: lightly salt and beat until snow-white peaks.
  3. Put the finished carrots into the dough. Stir well and slowly introduce proteins.
  4. Line the baking sheet with baking paper. We spread and evenly distribute the base for the future roll. We bake for 15 minutes at 180 degrees. Then we immediately take out the biscuit and dispose of the parchment. Let cool for 15 minutes.
  5. For the filling, combine the zest with cottage cheese and granulated sugar. Beat with a blender until the composition is completely homogeneous.
  6. Moving on to the sauce: dissolve the starch in cold orange juice. Add sugar and simmer until thick.
  7. We collect the carrot roll: cover the biscuit with half of the sauce. Distribute the filling and twist tightly. Pour the remaining sauce over the roll, and then send it to the refrigerator. The dish will be ready in a few hours.
