Cabbage was fermented in our country long before the appearance of potatoes. For hundreds of years, many recipes have been created for salting this vegetable, including with cranberries. Cabbage is fermented thanks to the lactic acid bacteria that are part of it. This product has a beneficial effect on the intestinal microflora, accelerates metabolism and is dietary.
Sauerkraut should be crispy and moderately sour. To achieve this result, only late-ripening vegetables that ripen in autumn are chosen for salting. The heads of cabbage should be firm, fresh and free from rot.
A simple recipe for cabbage with cranberries
For cooking, you need 3 kg of cabbage, 50 g of cranberries, 30 g of sugar, 2 carrots and 100 g of salt.
First, vegetables are prepared: the top leaves are removed from the cabbage, the head is cut in half and finely chopped. Chop the carrots on a coarse grater. Salt and sugar are poured onto vegetables, the mass is crumpled with hands so that juice appears. Only after that, add cranberries and transfer the cabbage to an enamel bowl.
You will have to follow the vegetables for 3 days: remove the foam and pierce it with a wooden stick every day. This is necessary so that gases come out of the vegetables. Then the cabbage is laid out in the jars as tightly as possible and stored in a cool place.
Cabbage recipe with cranberries and apples
You can add not only cranberries to cabbage, but also apples. In this case, the number of berries is not limited, and fruits and vegetables are placed at the rate of 1.5 kg of cabbage, 100 g of apples and carrots. This amount of food will need 30 g of salt.
Cabbage is prepared as in the previous recipe, and carrots and apples are chopped on a coarse grater. All products are transferred to a large container, covered with salt and mixed thoroughly. Then in a saucepan in layers: first cabbage, then cranberries, then vegetables again. A plate is placed on top, and a load is placed on it. Within 3 days, remove the foam and pierce the cabbage with a stick, and on the fourth day they transfer it to jars and close.
