What are the benefits of sauerkraut
Sauerkraut is an incredibly healthy product. The benefit of the food is the presence of many vitamins, a large amount of fiber. In addition, sauerkraut is a source of vitamin C, which remains in the product for a long time without loss (while when storing ordinary cabbage with heads of cabbage, this vitamin in it becomes less and less every day).
Cabbage brine is also useful. The product contains a lot of potassium, sodium, iron, succinic acid, which makes it indispensable for the prevention of anemia, cardiovascular diseases.
What kind of cabbage can you sour
Not all cabbage varieties are suitable for fermentation, but only those that contain a sufficient amount of sugars. Almost all mid-ripening and late-ripening varieties meet this requirement, however, specifically for pickling and long-term storage, you should choose vegetables of the following varieties and hybrids: Snow White, Grandslam F1, Geneva F1, Mara, Podarok, Polar, Slava.
The readiness of cabbage for pickling can be determined by its appearance and taste: ripe vegetables form a dense light head of cabbage, the leaves acquire juiciness and light sweetness.
When to ferment cabbage in October and November 2018
October and November are the best months for pickling cabbage, because at this time these vegetables ripen, and the cool weather, which is established during this period, allows you to store the product outside (for example, on the balcony).
You can, of course, ferment cabbage on any October or November day, however, in order for the product to be really tasty and stored for a long time, work should be carried out on the days of the growing moon, ideally on the fifth or sixth lunar day or on the days when the lunar body is in the signs of Aries, Taurus, Capricorn or Sagittarius. In October and November 2018, these will be 13, 14, 15, 16, 22, 24 October and 8, 9, 10, 11, 12, 13, 19, 20, 21, 22 November.
