Instructions

Step 1

Fill the tongue with cold water and leave to soak for 1, 5-2 hours.

Step 2

Rinse the pork tongue under running water using a brush. A tongue purchased from a supermarket is usually quite well processed and looks good. If you bought a pork tongue from the market, thoroughly cleanse it of muscle and hyoid tissue, lymph nodes, fat, blood, etc.

Step 3

Pour water into a saucepan and place over high heat.

Step 4

Wait for the water to boil and dip the pork tongue into the boiling water.

Step 5

Wait for a boil again, remove the foam with a slotted spoon, reduce the heat to low. Put onion, pepper, bay leaf, salt to taste in the broth.

Step 6

Cook the tongue until cooked through. This usually takes one and a half to two hours.

Step 7

After the pork tongue is cooked, remove it from the pan and quickly immerse it in cold water.

Step 8

After holding your tongue in cold water for 1-2 minutes, begin to peel off the skin from it. You can do it simply with your hands, you can use a knife. Usually the skin is removed in one layer. However, if this did not work out, it can be easily removed in small fragments. If the skin does not pick up well, then you have not finished your tongue. You will have to cook, and then repeat the procedure.

Step 9

Some housewives add spices to the broth - onions, peppers, bay leaves, carrots.
