Cherry beer is not very popular in Russia, but in its homeland, Belgium, many people like this kind of alcoholic drink. It is respected for its unusual taste, which is achieved by adding a rare variety of cherries.
Thanks to Belgian chefs, the whole world tasted cherry beer, which is still popular today. Later, it began to be produced in the Czech Republic and Germany, but the taste of their product is somewhat different. Cherry beer is not an elite drink at all, its cost is low. It's just that a special kind of cherry is added to the drink, which is called Kriek. It is thanks to him that the beer acquires a burgundy hue and fruity taste. However, cherry beer can be made at home, you just need to get the necessary ingredients and follow the technology.
Ingredients
To make cherry beer at home, you will need the following ingredients: 3.5 kg of cherries (the variety does not matter), 3 kg of sugar, 1 lemon, 100 g of tartar, 60 g of coriander seeds, 30 ml of honey, 20 liters of water and 20 gram of brewer's yeast. Cherries will need to be pitted, mashed and pour over 17 liters of water. The remaining 3 liters will need to dissolve sugar and tartar. Then, over low heat, this solution should be brought to a boil and cooled.
Brewing beer
Now you need to pour the prepared syrup into a wooden tub with cherries filled with water. Next, well-toasted brewer's yeast and coriander seeds are added there, after which the entire contents are thoroughly mixed. Then the tub is placed in a warm place for 3 days and covered with a napkin.
But that's not all, you still need to remove the zest from the lemon and chop it thoroughly. Then honey is added to this mass and everything is well mixed, almost until smooth. The resulting mixture should be brought to a boil and boiled for 5 minutes. As soon as it has cooled down, it will need to be added to the beer and kept for 2 days.
Bottling
After two days, the drink should be taken out and filtered through cheesecloth. A sieve will not work in this case, since there will be a lot of sediment after it, which is not very good for beer. The finished drink must be bottled and tightly corked with lids. Then he goes to a cold place for fermentation. After two weeks, the cherry beer will be ready to drink.
Undoubtedly, this product will be different from the Belgian drink, which is brewed in real breweries, because the recipe there is completely different, and it has not been disclosed for several centuries. However, many people prefer homemade beer, since it is drunk somewhat softer than store beer.
