The popular substitute for Olivier salad on the Soviet table is Stolichny salad. In the 30s of the twentieth century, the chef of the Moscow restaurant Ivan Ivanov "borrowed" the salad recipe from the master - Lucien Olivier. Replacing the hazel grouse with chicken meat, crayfish tails - with boiled carrots, and lettuce leaves - with parsley, Ivan Mikhailovich offered the Stolichny salad to the restaurant visitors. Now the Stolichny-Olivier salad is a national treasure.

- carrots - 2-3 pieces;
- pickled or fresh cucumber - 2 pieces;
- apple - 1-2 pieces;
- poultry meat - 200-300 grams;
- green peas - 1 glass;
- eggs - 3-4 pieces;
- salt
- pepper
- parsley to taste;
- mayonnaise - ½ cup.
- For mayonnaise:
- vegetable oil - 1 glass;
- yolk - 2 pieces;
- salt - ½ teaspoon;
- sugar - 1 teaspoon;
- lemon juice - 1 tablespoon;
- mustard - 1 teaspoon.
Instructions
Step 1
Take vegetables for the Stolichny salad of medium size. Boil potatoes and carrots in their skins. Peel and cut into small cubes.
Step 2
Wash eggs, boil hard-boiled (10 minutes), chop finely.
Step 3
Fresh cucumbers were added to the classic version of the "Capital" salad. Choose cucumbers according to your taste and availability. Whichever cucumbers you choose, pickled or fresh, peel them off. Cut into small cubes or slices.
Step 4
Boil poultry (chicken, turkey, partridge) until tender. Remove the skin. Cut the meat into small pieces. If you are short on time, you can replace the chicken with "Doctor's" sausage by cutting it into small cubes.
Step 5
Take canned or frozen green peas. Frozen peas must be defrosted in the air and the water drained. The marinade from the jar of canned peas must also be drained.
Step 6
Onions need to be peeled and finely chopped. If you use onions that are too spicy, you can get rid of the bitterness. Pour boiling water over the chopped onion and leave for 3-5 minutes, then drain.
Step 7
Wash the parsley, dry and chop finely.
Step 8
The apple should be sliced last so it doesn't darken. Peel and core the apple, cut into small cubes.
Step 9
Season the Stolichny salad with mayonnaise. Make the mayonnaise yourself. Mix 2 yolks, half a teaspoon of salt and one teaspoon of sugar. The sugar and salt should be completely dissolved. Beating the yolks, add 1 teaspoon each, add vegetable oil. Add lemon juice and mustard, stir.
Step 10
Combine all salad ingredients in a large container. You need to mix gently, with movements from bottom to top.

Put the salad in a slide in a salad bowl, garnish with parsley, carrot, cucumber and boiled egg flowers, serve.
