It is necessary

    • turkey;
    • 3.5 cups of nuts;
    • 3 cups prunes
    • 4 apples;
    • a glass of rice;
    • olive oil;
    • spices to taste;
    • salt;
    • foil.

Instructions

Step 1

Rinse the turkey well and pat dry with a towel. Rub the carcass with salt and spices. Brush with olive oil. Cover the outside and inside with sprigs of rosemary, sage, or any other favorite herb. Wrap the turkey in foil and refrigerate overnight to marinate.

Step 2

Rinse the prunes and soak in cold water until swollen. Then remove the bones from it and chop finely.

Step 3

Go through, rinse and cook the rice.

Step 4

Wash and slice the apples.

Step 5

Peel the nuts and chop them with a knife or mortar.

Step 6

Add prunes, apples, nuts to the rice and mix well.

Step 7

Fill the marinated turkey tightly with the cooked filling and sew carefully with the threads.

Step 8

Cut from the foil to the desired length of the panel. They will depend on the size of the turkey. Join the edges of the foil and fold them several times in a "seam" pattern about a centimeter wide. Lay the sheets diagonally on a baking sheet and place another layer of foil on top. Put the turkey carcass on the foil and very carefully so as not to damage the foil, wrap the bird first in an additional layer, and then in the main one.

Step 9

Preheat the oven to 250 degrees and place the turkey baking sheet in it.

Step 10

After thirty minutes, reduce the oven temperature to 180 degrees.

Step 11

Take the turkey out of the oven half an hour before it is ready, and very carefully so that the foil does not break and the juice does not leak onto the baking sheet, unfold it. Check the readiness of the bird by piercing the fleshy parts (breast and legs) with a knife. If clear juice is released from the meat, then the turkey is baked, and if it is scarlet, carefully wrap the carcass in foil again and put in the oven to bake until tender.

Step 12

If the bird is ready, make a "dish" out of foil, pour the juice over the turkey and put it in the unfolded form in the oven for another 15 minutes.

Step 13

Raise the oven temperature to 200 degrees and bake the poultry until golden brown. Do not forget to constantly water it with juice.

Step 14

Remove the threads from the finished turkey, take out the filling and arrange nicely on a platter, placing the bird in the middle. Serve to the table.
