Pasta occupies a strong position in the top ten most popular products among Russians. No wonder, because this product is inexpensive and any housewife will cook a lot of dishes from it! However, not always a high-quality product is hidden in colorful packaging.
Instructions
Step 1
First, inspect the packaging itself. It must be airtight. Otherwise, the pasta will absorb excess moisture from the air. The optimum moisture content for storing this product is 13%. The package must have a transparent "window" through which you can inspect the contents.
Step 2
Good pasta can be recognized by its smooth surface, creamy or light golden color. The fractures of such a product are smooth and glassy. There are no crumbs in the pack. But those products, the quality of which leaves much to be desired, are distinguished by a rough surface, an abundance of crumbs in a pack, a pale or bright yellow shade. You can also see blotches. Whitish means that the dough was not kneaded well, dark ones mean the remnants of grain shells.
Step 3
Take the time and read the information on the package. It should be written "group A" or "first grade". The phrase "from durum wheat" can also be found. If the product is imported, then look for the words durum or semolina di grano duro. If it says "group B" then soft wheat varieties were used.
Step 4
Only flour and water should be a part of pasta. Many people believe that the egg in the product provides a good taste and color. In fact, the egg is acceptable, but not for taste, but to improve the plastic properties of the dough. A good dough usually doesn't need any additives. If the products are colored, then the color should ideally be given by beets, spinach and dill. Although in fact, the manufacturer is more often limited to dyes.
Step 5
And, don't blame me, good pasta for 10 rubles, it's just a dream! With this dish, it is unrealistic to save to the limit without losing quality. A really high-quality product costs at least 30 rubles.
Step 6
Further checking of the pasta takes place in the pan. The good ones never stick together. By the way, you do not need to rinse them. It is enough not to drain all the water, leave a little in the saucepan. In addition, it is better not to slightly cook pasta. then they will better combine with the sauce.
