  • - onion - 1 pc.;
  • - sweet orange pepper - 1/2 pc.;
  • - green peas (fresh or frozen) - 200 g;
  • - zucchini - 1/2 pc.;
  • - garlic - 1-2 cloves;
  • - chicken - 1 pc.;
  • - vegetable oil - 3 tbsp. l.;
  • - vermicelli - 50 g;
  • - Parmesan - 50 g;
  • - salt - a pinch;
  • - ground black pepper - a pinch;
  • - greens - for decoration.

Instructions

Step 1

Cooking chicken broth. Rinse the chicken carcass with water, put in a saucepan, cover with cold water. When the water boils, drain the liquid. Fill the chicken with cold water again (you need about 2 liters of water). When the water boils again, remove the foam, salt, cook the chicken for another 20-30 minutes over low heat. Remove the chicken, strain the broth. You should get about 1.5 liters of chicken broth.

Step 2

Preparing vegetables. Wash carrots, onions, potatoes, zucchini, celery root with water and peel. Remove the stalk and seeds from the pepper. Cut all the listed vegetables into small cubes of the same size. Do not mix chopped vegetables. Scald the tomatoes with boiling water, remove the skin. Cut the tomatoes into cubes.

Step 3

Peel the garlic and onion. Chop the garlic finely. Cut the onion into half rings. Heat vegetable oil in a deep saucepan, add garlic and fry for about 1 minute. Then add the onion and fry the mixture for another 2-3 minutes. Then add bell peppers and carrots. Sauté the vegetables for another 5 minutes.

Step 4

Add potatoes, tomatoes, celery to the vegetables, simmer for 2-3 minutes, then pour the chicken broth over the vegetable mixture and cook over low heat for 15-20 minutes.

Step 5

Pour the vermicelli into the soup, salt, pepper, cook until the vermicelli is cooked. At the very end of cooking, add the peas to the soup.

Step 6

Grate Parmesan on a fine grater. Pour the finished minestrone into plates, sprinkle with Parmesan, garnish with fresh herbs. The dish is ready.
