Step 1

First, choose carrots that are free from rot, mold, and spoilage. Freshly harvested medium-length carrots are best suited for freezing, because very small carrots do not retain flavor after defrosting and it is much more difficult to peel them. Do not use sluggish or already dry root vegetables - they will still not be useful.

Step 2

Then wash the vegetable and peel with a knife or peeler, and trim off the ends on both sides of the carrots. Then rinse and leave on a towel or napkin to dry out the liquid.

Depending on which dish you are going to use the carrots in, cut the root vegetable in different ways: for borscht - into cubes, for various soups - into strips, for vegetable stew - into round slices. Also, be sure to grate carrots on a fine and coarse grater to add them to fried or stewed dishes, as well as to use them for mashed soups, jellies or desserts. There are other cutting methods: sprockets, wheels, halves, quarters, etc. In addition to the shapes indicated, slice the carrots in different thicknesses.

Boil water in a large saucepan and place carrots in boiling water in portions to blanch, then transfer to cold water. Keep in water for about 2 minutes. After that, leave the product to cool completely. Be aware that blanching slows down the enzymes that can change the color, taste, and aroma of a vegetable. Accordingly, blanching preserves all the properties of carrots.

Step 5

Arrange the chilled carrots, depending on the shape, in special small plastic bags or containers, from which it will be convenient to take the root vegetable and add it to dishes. Distribute the carrots evenly in the bag, release excess air from the bag and seal it tightly. Then send to the freezer for quick freezing.

Step 6

Carrots frozen in this way can be stored in the refrigerator for about 9 months, if you put vegetables in a vacuum bag, then the period increases to 14 months.

Step 7

When using, take a small portion of carrots from the bag you need and add to dishes. Frozen root vegetables are best used in cooking rather than raw.
