If you cook broth from them, cut the meat into pieces beforehand. In this case, for a rich broth, it will be enough for you to simmer the meat for no more than an hour. The old chicken will need to be boiled for at least 2-2.5 hours for it to boil and soften. Readiness can be determined by eye - the meat at the ends of the legs will begin to move away from the bones.

You can determine if a chicken that is fried whole on a grill or pan is cooked by piercing it in several places with a toothpick, fork, or cooking needle. Make deep punctures in the thick edge of the chicken breast and along the large bones. If the meat is ready, the fork will go into it without effort, and not the ichor will start to stand out from the puncture, but transparent meat juice. Chicken, cut into portions, will fry one and a half times faster than one that you cook whole or spread in a pan.

If you decide to bake the whole chicken in the oven, be sure to tie it with twine so that the legs and wings are tightly pressed against the carcass and do not burn.
