Sea buckthorn is a valuable raw material for making desserts, drinks, as well as healing oil. All dishes made from this berry have a recognizable taste, they contain a lot of vitamins and microelements. In addition, bright orange jams, jellies, jelly and sea buckthorn tinctures look very elegant.
Sea buckthorn jam
Thick sea buckthorn jam can be served with tea or used as a filling for pies. It will help with colds and nourish the body with vitamins, especially needed in winter.
You will need:
- 1.5 kg of sea buckthorn berries;
- 1.5 kg of sugar;
- 1 glass of water.
Sort the sea buckthorn, remove the stalks and litter, discard damaged berries. Rinse the fruits in several waters, discard in a colander, and then dry by sprinkling on a towel. Place the berries in a bowl.
Make a syrup. In a saucepan, boil water and sugar until the crystals are completely dissolved. Pour the hot syrup over the sea buckthorn, let stand for 2-3 hours, and then pour the syrup back into the saucepan. Boil it, chill and pour over the berries. Put the bowl on fire, bring the mixture to a boil and cook for 10 minutes. Then pour the jam into pre-sterilized jars and close the lids. Refrigerate sea buckthorn and store.
Sea buckthorn jelly
A healthy low-calorie dessert is homemade sea buckthorn jelly. The sweetness of the drink can be varied according to taste. Kissel prepared according to this recipe retains all vitamins - after all, it contains puree from fresh berries, which has not undergone long-term culinary processing.
You will need:
- 1 glass of sea buckthorn berries;
- 0.75 glasses of sugar;
- 2 tablespoons of potato starch.
If you like thinner jelly, reduce the amount of starch.
Rub the berries through a sieve, set aside the puree. Place the remaining cake in a saucepan and cover with water. Bring the mixture to a boil, cook for 5 minutes, and then strain. Pour the resulting fruit drink into the pan, add sugar. Cook until the crystals are completely dissolved.
Dissolve the starch with cold water and pour into a saucepan. While stirring, bring the jelly to a boil and remove from the stove. Put sea buckthorn puree in hot jelly, stir and pour the drink into glasses to cool.
To prevent a film from forming on the jelly, sprinkle it with a small amount of powdered sugar.
Sea buckthorn tincture
Sea buckthorn can be used to make a beautiful bright orange tincture. It is used as a medicine, as well as an appetite and mood-boosting agent.
You will need:
- 1 kg of sea buckthorn;
- 2 tablespoons of liquid honey;
- 1 liter of vodka.
Sort the berries, rinse and dry. Pour sea buckthorn into a two-liter bottle, add honey and fill the mixture with vodka. Insist berries for about 2 weeks in a dark place, then strain and bottle. Cork them tightly and keep cool. A film of oil may form on top - shake the tincture before use.
