Udmurt repels are usually prepared for the holidays, although traditionally these mouth-watering pastries can be tasted not only at a festive feast in a restaurant, but also during an ordinary meal in a cafe or canteen. The raised and beautifully pinched edges of the flour plates hold well any filling: meat (pork, beef, lamb), potatoes, cabbage, mushrooms, various cereals, cottage cheese and other products. Mushrooms and onions are pre-chopped and fried with onions in a sufficient amount of butter or vegetable oil for the selected variety of mushrooms. The dough is kneaded and divided into equal-sized balls, from which cakes with a diameter of 8 to 10 cm are rolled out using a rolling pin. The edges of the cakes are carefully "rolled" to form the necessary sides, and the resulting "saucers" are slightly baked in the oven or oven - first without filling. Then the baskets are filled with minced mushroom, filled with a mixture of eggs and milk and baked at 180 degrees for about 15 minutes.
To obtain a golden brown crust, it is recommended to grease the baskets with sour cream before baking. When served on the table, an even more elegant look will give the products lubricated with butter.
