Glass noodles are an oriental product that came to us along with soy tofu and spicy wasabi. This is a nutritious and unusual dish that does not have a pronounced taste, therefore various sauces, fried vegetables, and meat are well suited to it. Cooking glass noodles isn't time consuming, but it does take some skill.
Instructions
Step 1
Glass, or cellophane, noodles are called for the fact that after cooking they retain their transparency. It can also be found under the name "funchose". Make glass noodles from starch, rice, or beans. Rice starch noodles, after boiling, look more like regular thin noodles, while legume noodles remain completely transparent.
Step 2
Experienced cooks do not recommend cooking transparent noodles. Soak it for 5-15 minutes in very hot water or even boiling water. Then put the noodles in a colander and let it stand for a while so that all the water is glass (this is important, otherwise the transparent strands of glass noodles will acquire extra softness or even dissolve and turn into an ugly and indigestible mass).
Step 3
In some recipes, there is a recommendation to throw glass noodles into boiling water and cook, stirring occasionally, for 3 minutes, but no more, so that the noodles are not overcooked. You can try this method as well, but it works better for the denser beanstarch noodles. The finished noodles should be soft, slightly slippery, but not boiled, and keep their shape. If you overexpose it in hot water, there is a danger that it will simply dissolve.
Step 4
After cooking, cut the glass noodles with scissors. Since it is customary to season it with rather salty soy sauce, the water with which the noodles are poured does not have to be salted. Ready-made noodles themselves are almost tasteless, which is why funchose is an excellent side dish and an excellent basis for salads. It is eaten both hot and cold.
Step 5
If you plan to cook soup with glass noodles, add it a couple of minutes before cooking, never before, and do not soak before cooking.
Step 6
Alternatively, glass noodles can be deep-fried. Fried in hot sunflower or sesame oil for a few minutes, the noodles become pleasantly crispy. Also, do not soak the noodles before frying.
