Wash and peel carrots, zucchini, eggplant. If the zucchini is young and its skin is thin, then it can be left on. Cut vegetables into small cubes. Peel the onion and bell peppers and cut into half rings. Pour boiling water over the tomatoes, and then peel them off. Cut the tomatoes into cubes.

Put a large saucepan on fire, pour in vegetable oil. When the oil is hot, pour the onion into a saucepan. Fry for 1-2 minutes until golden brown. Add the tomatoes and fry them with the onions for 2-3 minutes. Then add the zucchini, eggplant and carrots. If the tomatoes are low in juice, add 3-4 tablespoons of water. Simmer the vegetables for about 10 minutes, stirring constantly. At the end of cooking, season with salt and seasonings.
