If you want to cook delicious pancakes for breakfast, and there is no fresh milk in the refrigerator, feel free to knead the dough in milk powder. The pancakes are fluffy and airy.
Simple pancakes with milk powder
To quickly make delicious pancakes, take:
- wheat flour - 5 tablespoons;
- powdered milk - 2 tablespoons;
- sugar - 1 tablespoon;
- salt - 0.5 tsp;
- chicken egg - 1 pc.;
- baking soda - 0.5 tsp;
- citric acid - 0.25 tsp;
- vegetable oil - 3 tablespoons;
- vanillin - to taste.
First, you need to sift the flour so that there are no lumps in the dough. Powdered milk must be mixed with salt and added to flour. Grind an egg with sugar, add citric acid, soda, mix everything thoroughly. Add half a glass of warm boiled water to the egg mixture, stir. Gradually add flour to the resulting mass, observing the homogeneity of the dough. Pour a teaspoon of vegetable oil into the finished dough (use the rest of the oil for frying pancakes). For flavor, you need to add a little vanillin.
Fry the pancakes in a hot pan in a little vegetable oil. When frying, the pancakes will almost double in volume, so do not put the dough portions too close to each other in the pan.
Coconut pancakes with raisins
To make fluffy pancakes with milk powder and raisins, take:
- powdered milk - 200 g;
- water - 200 ml;
- wheat flour - 200 g;
- coconut shavings - 3 tablespoons;
- raisins - 2 tablespoons;
- curd serum - 40 ml;
- sugar - 50 g;
- baking soda - 0.5 tsp;
- salt - 0.25 tsp;
- vegetable oil - 2 tablespoons
First, take a small container and dilute the milk powder in it with warm water. Mix well, beat a little and leave to cool. To make the pancakes lush, you need to add curd whey to the milk mixture. Then you should put raisins in the dough and cover with coconut flakes, mix everything thoroughly.
Add baking soda, salt, 2 tsp. vegetable oil (use the rest for frying). Stir and add flour in portions, stirring the dough thoroughly to avoid clumping. You need to fry such pancakes over medium heat, preferably covering with a lid.
If you wish, you can diversify any recipe by adding your favorite fruits, berries and seasonings to the dough. To make the pancakes more tender, you can add some fresh grated apples and a pinch of cinnamon to the dough for flavor. If you like sweets, pour a tablespoon of cherry or strawberry syrup into the finished dough.
Care should be taken with dry seasonings: if you add too much vanillin or cinnamon, you can spoil the dough, making it bitter. For convenience, you can replace "pure" vanillin and cinnamon with vanilla and cinnamon sugar - in that case it is difficult to overdo it.
