One of the most delicious and loved by many Russians dishes is fried mushrooms, which are processed in the following ways before frying: drying, freezing, salting or pickling. It is believed that it is better not to fry pickled mushrooms, because they have already undergone heat treatment, but to use them as a cold snack. However, there are many recipes for frying pickled mushrooms, the result is a delicious dish, no worse than fresh fried mushrooms.

- - 500 g of pickled mushrooms;
- - 1 kg of potatoes;

- - 2 tbsp. l. vegetable oil;
- - salt, spices (to taste);

- To prepare fried pickled mushrooms with sour cream:
- - 400 g of pickled mushrooms;
- - 100 ml sour cream;
- - 2 tbsp. l. vegetable oil;
- - garlic - 2-3 cloves;
- - ground pepper (to taste);
- - salt (to taste);
- - greens (dill, parsley, etc.);
- - frying pan.
Instructions
Step 1
Any pickled mushrooms (mushrooms, porcini, chanterelles, russula, champignons, etc.) must be thoroughly rinsed in running water before frying. You can use both home pickled mushrooms and store ones. Heat a skillet on the stove and add a few tablespoons of vegetable oil. Peel the onions, cut into cubes or half rings and fry over low heat until golden brown.

Then put the washed mushrooms in a pan, salt and add spices to taste, cover and fry for 15-20 minutes. A few minutes before the end of frying, you can add sour cream to the mushrooms. Fried pickled mushrooms are ready and can be served with vegetables (potatoes or cabbage), buckwheat or other side dishes.

Cook fried mushrooms with potatoes. Peel and chop the onion, then fry in vegetable oil in a preheated pan. Rinse the mushrooms and place in a separate plate. Peel the potatoes and cut into strips, salt and fry with the onions until half cooked. Then put the mushrooms in a pan and fry over low heat.

Keep in mind that you need to cook potatoes and mushrooms carefully, make sure that the potatoes are almost fried and only then add the mushrooms, otherwise the dish may turn out damp.

Undoubtedly, your family will love the fried pickled mushrooms with sour cream. Rinse the mushrooms under running water and put in a separate plate. Meanwhile, peel the onion and fry in a pan with heated vegetable oil, then transfer the mushrooms to the onion and fry for a few minutes, then add more vegetable oil and continue frying until the liquid evaporates.

In the next step, add sour cream to the mushrooms, salt and pepper to your liking. After the sour cream begins to boil, cover the pan with a lid and simmer over low heat for about 5-7 minutes. If you want to fry the sauce, then the stewing time should be increased.
