Beets are a vegetable that can be eaten all year round, and all the nutrients will be preserved in it. And there are a lot of them in this root vegetable: vitamin C (protection against colds), vitamin PP (against fatigue), vitamin A (for vigilance), vitamin B (for beautiful skin, hair and nails). Beets are used to make soups, salads and even cutlets. And do not be afraid that cooking this vegetable takes a lot of time: proper cooking of beets will take no more than an hour.

Instructions
Step 1
Boil water in a saucepan. The volume is such that the beets put there are covered with water by 1-2 cm. Add sugar, citric acid or vinegar to boiling water (at the rate of 1/2 teaspoon per 1 liter of water).
Step 2
The root must not be cut off from the beets, otherwise it will brighten during cooking. Better to leave the beet tail intact altogether. Rinse the root crop itself well, but do not peel it: this way the beet will retain its juiciness and water-soluble mineral salts. Then put the beets in boiling water, close the lid tightly and let it boil for 1 hour.
Step 3
Remove the beets from the pot and keep them under running cold water for 10 minutes. If the beets were large, then they can be allowed to boil for another 15-20 on the stove, and then cooled again.
