It would seem, what a problem - to cut the cabbage! But when you do this closely, it suddenly turns out that there are many ways, and it is not so easy - to cut the cabbage so that it turns out to be even, thin, and your hands remain intact. Of course, this business requires skill, which is the result of experience.

Step 1
Take a dense head of cabbage, remove the top leaves, wash it and remove, if necessary, external defects of the head: black spots, cuts, etc. The taste of the finished dish is primarily influenced by the variety of cabbage. For pickling cabbage, for example, use late-ripening varieties that are juicy, firm and crunchy.
Step 2
Cut the cabbage in half. You can do this in different ways, but it would be more correct to cut it from the side of the stump. If you cut on the other side, the cabbage will disintegrate into leaves when shredding, and cutting each leaf separately is a waste of time and effort.
Step 3
Then cut the halves of the cabbage fork in half, and if necessary, you can cut the quarters in half, so that the cabbage chips are 5-7 cm long. Try to keep the cabbage slices tight and not scattered.
Step 4
Holding the forks with your hand on the side of the stump, start chopping the free end into thin strips 3 mm wide. Wider strips will take longer to boil or fry, or take longer to ferment.
Step 5
Sometimes cabbage has to be shredded in large volumes, for example, when it is fermented for the winter. Devices for quick slicing of cabbage were invented by ancestors, some of them you still use today. But in a modern home, you can often find more modern devices - a special grater, slicer or food processor - all these devices allow you to cut food into thin strips, adjust the thickness of the slices and ultimately speed up the shredding process. In all cases, you must first prepare the cabbage for shredding. Cut it into pieces that will be conveniently chopped on a special grater or lowered into the inlet of the combine.
Step 6
If you are shredding cabbage in a food processor, cut the stump first so that the hard part does not get into the shredded cabbage. You need to be aware that shredding in a combine will make the result less standard. This is the fastest way, and rather suitable for slicing cabbage for stewing or for borscht.
