The pale color of the shells will indicate to you that the shrimp was stored in conditions of temperature changes, and this is detrimental to the product. And dark or black shrimp heads indicate that the goods are spoiled. Most of the beneficial properties are preserved in shrimp frozen in a single block, and not individually. Size also matters: large is preferable. Finally, it is advisable to purchase shrimp in packaging, and not by weight, so that you can find out information about the producer and the region where the shrimps were caught. The first thing to know about cooking shrimp is that they should never be overexposed. Regardless of the recipe, whether you fry them or boil them, keep track of the time. Defrozen must be boiled for 1-2 minutes, frozen - no more than five. Some even recommend that after defrosting, simply pour boiling water over the shrimp and limit it to that. By the way, you also need to defrost shrimp competently. The best way is to place them in a container of cold water for 15-20 minutes.
