Many baking recipes contain the cryptic words "extinguish the soda with vinegar." In fact, there is nothing difficult about redeeming soda. It is enough just to drop a drop of acid - citric or acetic acid.
It is necessary

- a teaspoon of baking soda (no slide)
- a few drops of vinegar or citric acid
Instructions
Step 1
Take a teaspoon of baking soda. There should be so much soda that there is no "slide" - the excess can be removed with a knife.
Step 2
Gently drip a few drops of 9% vinegar onto the baking soda. The baking soda will begin to sizzle and foam. If not all of the baking soda reacts, add another drop after the foam has subsided. Instead of vinegar, you can take citric acid - squeeze a few drops of juice out of lemon or dilute citric acid powder with water.
Step 3
Add the resulting foam to the dough (most often the soda is quenched with vinegar precisely in order to add it to the dough when baking)
