Step 1

Choose good beets with firm, smooth, reddish skin and no visible damage or rot. Do not buy oversized light-colored vegetables, as these beets can be fodder. Buy root vegetables of normal size with a uniform surface.

Step 2

Take the required amount of beets and rinse thoroughly in cool water. Then, using a vegetable brush, scrub the roots well and rinse them. Peeling vegetables is undesirable. Also, you should not cut the beets before cooking, because when you grind a vegetable, the area of its contact with water increases, as a result of which a significant part of the nutrients is washed out.

Step 3

Place the beets in a saucepan and cover with boiling water, measure the amount in advance. The water should only slightly cover the roots, about one finger. Next, cover with a lid and put on the highest heat.

Step 4

Wait for the moment when the water boils, and then reduce the heat to minimum. Remove the lid and stir regularly. This should be done to prevent the beets from sticking to the bottom of the pot.

Step 5

Cook vegetables for 45-60 minutes. Use a knife to check the readiness of the root vegetables. If the knife enters the beets easily, then it is ready.

Step 6

Drain the pot of beets and let the vegetables cool. You can also dump the root vegetables in a colander and fill them with ice water - this will make it easier to clean the beets.
