Sea urchins are molluscs that can move slowly on hard surfaces. As a rule, they attach themselves to pitfalls. Hunting for them is carried out quite simply - by diving to a shallow depth and scraping them with a knife from the surface of the stones. Of course, you can use this catch to prepare various dishes, however, it is most useful and correct to use sea urchins raw.

Sea urchins, which are edible, usually have a small clump of algae attached to their top. They should also never be black: choose clams with subtle shades of red, green, or purple.

Despite common misconceptions, sea urchins are not dangerous. Of course, their thorns can inflict a painful wound when they pierce the skin, but such injuries only occur if they are inadvertently grasped with your hands.

When removing shellfish from the water, it is advisable not to use plastic bags. A large plastic bucket with a little water is an ideal container for catching. This will allow the sea urchins to remain alive and fit for consumption for a long time.

Attempting to open freshly caught prey with scissors or any other means at hand is likely to be unsuccessful and could result in serious injury. For this purpose it is necessary to use a very sharp knife or a special device (which is quite cheap).
Step 5
Cut the clam in half (if using a sharp knife) or open it with a special device. Be careful - liquid contents may leak.
Step 6
When talking about how to eat a sea urchin correctly, remember that the edible part of it is caviar and gonads. Rinse the opened clam gently with a little water. This will flush out the intestines and other inedible parts. Clean orange-brownish insides should be visible after rinsing.

Now you can start eating by scooping out the insides of the clam with a teaspoon. Raw sea urchins are consumed in their natural form, without any additives. The clam eggs should be easily separated from other viscera.
