Homemade ice cream can be made as a summer dessert. The delicate and mellow taste of regular ice cream can be diversified by adding chocolate chips to it.
It is necessary
- - icing sugar (120 g);
- - milk (200 ml);
- - cream with a fat content of 35% (300 ml);
- - powdered milk (1 tbsp. spoon);
- - chilled egg yolks (5 pcs.);
- - dark chocolate (1 bar);
- - vanilla (1 pinch).
Instructions
Step 1
To prepare creamy ice cream, add 1 tbsp to the milk. a spoonful of milk powder and a small amount of vanilla. Put the saucepan with milk on low heat, bring to a boil, remove from heat and cool to 40 degrees. In a separate enamel bowl, beat the cooled egg yolks with 70 g of powdered sugar until stiff. Pour milk cooled to the desired temperature into a bowl with whipped yolks, without ceasing to interfere.
Step 2
Place the resulting mixture in a water bath and cook for 10-15 minutes, stirring it with a spatula. Remove the bowl with the yolk-milk mixture from the water bath and immediately lower it into a container previously filled with cold water, then put the mixture in the refrigerator for 15 minutes.
Step 3
Mix the cream with the rest of the icing sugar, whisking with a mixer until it is firm, thick foam. Remove the chilled milk yolk mixture from the refrigerator and mix with the whipped cream.
Step 4
Pour the ice cream cone into a plastic container with a tight-fitting lid and place it in the freezer for 4 hours. To make the ice cream soft (without coarse crystals), it must be periodically stirred with a whisk every 20 minutes in the first 2 hours of freezing. Grind a bar of dark chocolate into fine crumbs and add it to the ice cream at the last mixing.
