  • For sour cream sauce with tomato paste:
  • - 250 g sour cream;
  • - 2 tbsp. l. tomato paste;
  • - 200 ml of broth;
  • - 2 tbsp. l. flour;
  • - 2 tbsp. l. butter;
  • - paprika;
  • - salt.
  • For mushroom sauce:
  • - 200 g of mushrooms;
  • - 2 tbsp. l. vegetable oil;
  • - 2 heads of onions;
  • - 1 tbsp. l. flour;
  • - ½ glass of mushroom broth;
  • - ground black pepper;
  • - salt.
  • For the classic vinegar sauce:
  • - 3 tbsp. l. vegetable oil;
  • - 1 tbsp. l. vinegar (6%);
  • - greens of dill and parsley;
  • - ground black pepper;
  • - salt.
  • For dumplings baked with cheese and mushrooms:
  • - 500 g of dumplings;
  • - 300 g of champignons;
  • - 2 onions;
  • - 100 g of cheese;
  • - 3 tbsp. l. sour cream;
  • - vegetable oil;
  • - greens;
  • - red and black ground pepper;
  • - salt.

Step 1

Dumpling in translation from Perm means "ear from dough". Since olden times, dumplings have been eaten with a spoon. And now many are true to this tradition, even when they are consumed without broth, but with butter, sour cream, mayonnaise or other sauce. But according to the rules of etiquette, in this case, the dumplings should be eaten with a fork: prick behind the "earlobe" and send the whole thing into the mouth. If the dumplings are large, then each is divided into several parts with a fork.

Dumplings are a versatile dish that goes well with almost any sauce or additive. They are served with broth, sour cream, mayonnaise, vinegar, adjika, ketchup and butter, sprinkled with chopped herbs or fried onions, and if you put a little effort, you can prepare and serve an original sauce with dumplings.

Sour cream sauce with tomato paste

Melt the butter in a skillet and fry the flour in it, stirring occasionally. Gradually pour in the broth, stirring constantly so that there are no lumps, bring to a boil. Then add sour cream and tomato paste. Season with salt to taste. Stir well until smooth and cook for another 3-4 minutes. Season with paprika at the end of cooking.

Mushroom sauce

Wash well or wipe fresh mushrooms with a damp cloth, chop very finely and fry in vegetable oil along with peeled and chopped onions. Separately brown the flour in a dry skillet. Then dilute it with mushroom broth to the consistency of liquid sour cream. Add mushrooms fried with onions to the resulting sauce along with butter. Stir, salt, pepper and heat until boiling.

Step 5

Classic vinegar sauce

Wash the dill and parsley greens thoroughly, dry and chop very finely. Dissolve salt in table vinegar, then add vegetable oil, pepper and about a handful of chopped herbs. Mix everything well and serve with boiled dumplings.

Step 6

Dumplings baked with cheese and mushrooms

Wipe the mushrooms with a damp cloth and cut into slices. Finely chop the peeled onion and fry with the mushrooms in vegetable oil until golden. Then add sour cream and chopped herbs. Season with salt to taste and season with pepper. Simmer for 2-3 minutes. Then cool, add grated cheese and mix thoroughly.

Step 7

Boil the dumplings in salted water until tender. Drain the water and place the dumplings in a greased ovenproof dish. Pour the prepared mushroom sauce over the dumplings and bake in the oven for 10-15 minutes at 180 ° C.
