Jalapenos are a very spicy variety of chili peppers. However, there are cultivation and cooking technologies that can significantly reduce the pungency of the product. Therefore, jalapenos are successfully used in cooking.
How is jalapeno pepper used?
Naturally grown peppers are almost impossible to eat, although there are lovers of fresh jalapenos. A burning aftertaste lasts for several hours. They even pick pepper with rubber gloves, as its juice irritates the skin. Nevertheless, in Mexico, the product is very popular and almost no meal is complete without hot peppers.
To reduce the pungency of the pepper, it is necessary to remove all the seeds along with the core. In addition, pickling allows you to eliminate the pungent taste. Jalapeños are often used in the preparation of the tomato soft drink "sangrita", which is washed down with tequila. Pepper is stuffed, added to vegetable stews, used to make salsa.
Red peppers are dried, crushed and used as a seasoning. Jalapenos are often smoked. In this case, the pepper acquires a pronounced smoky and chocolate flavor. In Italy, jalapenos are added to pizza, and in the United States, pepper is used to make chips. Sometimes, jams and preserves are made from hot peppers.
Jalapeno recipes are quite diverse, but fresh pepper is rarely found in Russia. Pickled jalapenos can be used, which are sometimes available on the market.
Jalapenos in bacon
Cut 20 peeled peppers lengthwise into 2 halves. Wild mushrooms are mixed with a little heavy cream, fresh chopped herbs and a chicken egg. The peppers are filled with minced meat and covered with grated cheese.
Each piece is wrapped with a thin strip of bacon. Then, the peppers are laid out on a baking sheet, greased with vegetable oil, and sent to the oven, heated to 200 ° C. After 20 minutes, the jalapenos in bacon are ready.
Jalapeno with tuna
Cut the onion into small cubes and mix with the grated garlic clove. The mixture is fried in vegetable oil until golden brown. The tomato is peeled, rubbed and added to the fried onion. Stew vegetables until the liquid evaporates completely. Then the vegetables are transferred to a deep bowl and left to cool.
The cooled vegetables are mixed with canned tuna and chopped cilantro. Peeled jalapeno peppers are cut lengthwise and filled with prepared minced meat in both halves. You can use the dish as a cold snack.
