    • carrots - 2 pieces;
    • onion - 1 piece;
    • garlic - 2 cloves;
    • white wine
    • dry - 1 glass;
    • olive oil - 4 tablespoons;
    • fresh herbs
    • dry herbs;
    • salt
    • spice.

Instructions

Step 1

Peel the fish, remove the gills, and cut off the fins with cooking scissors. Along the back (along the ridge) from head to tail, make a deep cut on both sides to the ribs. Using culinary scissors, carefully cut off the rib bones and pull the ridge out of the fish. Spread it out, remove the entrails, rinse and pull out the rib bones using tweezers or separating them with a knife from the meat layer. Lightly salt the inside and outside of the carcass.

Peel the zucchini and carrots, cut into small pieces. Cut the onion into half rings. Heat olive oil in a frying pan, fry a couple of garlic cloves crushed with the flat side of a knife in it. When the garlic is browned, remove it from the pan. Put onion, fry it until transparent.

Add zucchini and carrots to the pan, salt and pepper them, sprinkle with dry herbs - rosemary, basil, oregano. Fry, stirring slightly, pour in the wine, lightly simmer under the lid. Then add finely chopped fresh herbs. Mix everything, remove from heat.

Put the vegetable filling in the belly, fold the fish in half, pressing firmly along the dorsal cut. You can tie the carcass or chop it off with toothpicks, but it won't fall apart anyway. Put the fish on a greased baking sheet, pour oil on top as well and place in the oven, preheated to 200 ° C for half an hour.

Step 5

Place the fish on a large platter, garnish with vegetables and herbs. It can be cut into portions when serving. And since there are practically no bones in it, it will not be difficult to do this.
