To make crispy sauerkraut for the winter, you need to make a brine. It is prepared in the following way. Pour one liter of water into a saucepan. Let it boil. Add one hundred grams of salt, allspice peas, bay leaves. After the water boils again, set the pot aside and let the brine cool.

For sauerkraut, it is best to use glass or enamel dishes. Prepare clean, dry jars. Take the wood plank that you use to chop vegetables. It must be big enough. Prepare the cabbage. Remove the top leaves and rinse the cabbage under running water. Use a sharp knife to cut the cabbage into strips.
Wash the carrots, peel off the peel and also cut into strips. Mix with cabbage.
Step 3
Place the bay leaf and pepper on the bottom of the jar prepared for sauerkraut. Then pour in some brine. Place the cabbage and carrots in the jar and tamp it down. Then add the cabbage and carrots again and tamp. Continue this way until the jar is full. The cabbage should not reach the top of the jar a little.
Close the jar with a loose lid and place on a deep plate. Pierce the cabbage every day to the very bottom of the jar with a wooden stick, releasing the air. Top up the brine jar as needed. To do this, use the brine that you prepared for fermentation. It will take you about three days to get a tasty and crispy cabbage.
