So the milk mushrooms went - fragrant, crispy. It's time to harvest mushrooms for the winter. Milk mushrooms are salted in hot cans and cold barrels. The first method is preferable, since not everyone needs a huge barrel of mushrooms for the winter, and the taste of such mushrooms is excellent.

  • - 1 tbsp. 9% vinegar;
  • - peppercorns;

Instructions

Step 1

Prepare 3 l jars under the milk mushrooms, for this wash them and be sure to sterilize with hot steam. Prepare plastic lids for hot canning. We will not close the mushrooms hermetically, but salted milk mushrooms in a jar will stand perfectly in the winter - they will not darken or become moldy. These mushrooms can be eaten in salads, fried, boiled, and filled with pies.

Milk mushrooms are different, I salt white milk mushrooms in jars for the winter, in the Urals they are called "dry". They are not bitter and do not require pre-soaking. So, peel the mushrooms and wash. To do this, it is better to scrape off the caps with a knife or a stiff brush and rinse the plates from dirt under running water. Boil the milk mushrooms, it is possible without salt, drain this water and take 3 kg of mushrooms for one 3 liter jar. Next, you will cook them in brine.

Step 3

Pour 1 liter of water into a saucepan, add salt and spices, heat, lower the milk mushrooms. By the way, it is better to salt small milk mushrooms in jars for the winter, but if you have collected large ones, just cut them into pieces. Boil the mushrooms over low heat for 20-30 minutes, pour in the vinegar at the very end of cooking so that the milk mushrooms do not sour in winter. Stir and place hot in the jars.

Step 4

Put the salted milk mushrooms tightly into the jars, then pour a little brine under the neck. You must have plastic hot canning lids boiling at the same time. Close the jar tightly with such a lid and set aside. You can fill the next one. It is not necessary to turn it upside down, it is enough just to warm it with a blanket. You need to store such salted milk mushrooms in jars in the cellar or in the basement. The main thing is in a cool place. After you open the jar and take some mushrooms, store the remaining ones in the refrigerator, then they will not darken or deteriorate.
