Bread soup is, perhaps, in the cuisine of almost any nation, as a tasty invention of the genius poor.
Instructions
Step 1
The most famous soup, which includes crispy white bread croutons, originally from France is onion soup. To prepare it, take 7 pieces of medium-sized white onions, peel and cut into small cubes. Simmer by adding 3 tablespoons of vegetable or butter until golden brown. Add 3 tablespoons of wheat flour, salt, spices to taste, mix thoroughly, add 1, 5 - 2 liters of cold water. The soup is boiled over the lowest heat for half an hour. The prepared soup can be wiped off so that there are no unpleasant pieces of boiled onion. Now you can put slices of toasted white bread into the soup, sprinkle with grated cheese and brown in the oven.
Step 2
There is also a Jewish soup called pytsye (or pizza), which is cooked in meat broth with the addition of beaten raw eggs, chopped boiled meat, and is always served with garlic croutons.
Step 3
Potatoes and onions can be used to make a very simple soup. We take one onion, ten potatoes, peel and cut everything into cubes. Simmer, adding about 50 ml of oil, until soft, pour in a liter of water, add salt and bay leaf. We boil for about 10 minutes. Meanwhile, dry 4-5 slices of white bread in the oven. When the vegetables are cooked, add dried bread, 3-5 tablespoons of heavy cream or homemade sour cream, 2-3 cloves of garlic to the pan, and whisk everything together with an immersion blender until a homogeneous cream is obtained.
You can make soup with cabbage or zucchini in the same way. Oven-dried bread combined with the aroma of garlic and delicate heavy cream will transform the taste of the dish, and the creamy texture will add sophistication to simple cabbage soup.
Spanish cold gazpacho soup is also prepared with the addition of grated bread crumbs.
Step 4
Bread soup can be more than just the first course. There is a little-known old Russian dessert called "Bread Soup". In addition to rye crackers, this dessert contains raisins, ground cinnamon, sugar or honey.
Bread soup is prepared very simply and quickly: crackers or stale bread are soaked in water, wiped through a sieve or blender, raisins, cinnamon, sugar or honey are added to them, boiled for 10 minutes before boiling, then cooled slightly, poured into bowls and completely cooled … A similar dessert is also present in the cuisines of some Baltic peoples.
Step 5
There is a whole group of soups that are traditionally served on a bread plate. For example, American clam chowder soup. It can also be served with salty crackers on a plate. The same group of soups includes Hungarian and Transcarpathian goulash soup. Well, that's a slightly different story.
