Step 1

Rinse well ripe fruits without cracks, you can use a soft brush, and carefully remove the stalks from them so as not to break their integrity. For jam, it is better to take light varieties of figs, the dark skin is tough and must be cut off. Stick all the fruits with a fork and blanch at 80-90 degrees for about 5 minutes. Take them out and cool in cold water.

Step 2

Boil the sugar syrup with water after blanching and pour over the figs warm. Let stand for 8 hours to soak in the syrup. Then boil for 10 minutes and leave for 8 hours. Then bring everything to a boil and set aside for another 8 hours. For the third time, cook the fig jam until the fruit is transparent, at the end of cooking, if you wish, you can add 2-3 tablespoons of lemon juice and 1 g of vanillin, but even without them, the jam is delicious.

The second way: you can cover the figs with sugar and let stand for several hours, cook until cooked for 30-40 minutes, pouring in 1 glass of water at the beginning of cooking. The jam is ready if a drop of syrup from it does not spread on the saucer.

Step 3

Pour the finished jam into prepared hot jars and screw or close with plastic lids. Fig jam is perfect both for tea drinking and for filling pies.
