Cold cucumber soup
A very unusual and delicious dish made from fresh cucumbers is cold cucumber soup. To prepare it, you need to take 1 kilogram of cucumbers, 200 grams of thick sour cream, 1 liter of vegetable broth, 200 milliliters of 30% cream, 1 tablespoon of mustard, 3 cloves of garlic, 200 grams of smoked red fish, a bunch of greens and crackers. Thoroughly washed and peeled cucumbers are rubbed on a coarse grater, and sour cream, chopped mint, cream, herbs and mustard are added to the broth, mixing everything with a whisk.
To make a low-calorie cucumber soup, remove the heavy cream from the recipe.
