Zucchini and tomato salad for the winter

You will need:

- 1 kg of small zucchini;

- 1.5 kg of dense tomatoes;

- 300 g of garlic;

- 75 g of vegetable oil;

- 50 g of sugar;

- 40 g of salt.

Wash and peel the zucchini, cut into slices and place in a saucepan. Add sugar, salt and butter, turn on heat and simmer for 10 minutes. During this time, wash and chop the tomatoes and add to the courgettes. Continue simmering for 10 minutes, then add the chopped garlic and onion. While the salad is cooking for another 20 minutes, prepare the jars. Wash them and pour boiling water over them for 10 minutes. Drain the water and cover the jars with boiled lids. Now put the salad in the jars, cover and sterilize. For 0.5 liters, it takes 20 minutes, for 1 liter - 40 minutes. Then roll it up.

To be sure to avoid puffing up the lids, turn the cans over and cover with something warm until they cool completely, then you can put them away for permanent storage.

Winter Rice Salad Recipe

You will need:

- 1 glass of round rice;

- 2 kg of red tomatoes;

- 1 kg of onions;

- 1 kg of red sweet pepper;

- 1 kg of carrots;

- 1 head of garlic;

- 1 glass of vegetable oil;

- 3 tbsp. salt;

- 3 tbsp. Sahara.

Rinse the rice and cook until half cooked. Rinse under cold water. Peel and chop the onion. Wash the peppers and tomatoes and cut into small pieces. Peel and grate the carrots on a medium grater. Fry the onions in vegetable oil until transparent, add pepper, and hold on the stove for another 3 minutes. Transfer to a saucepan with tomatoes, carrots and rice. Add sugar and salt, add oil. Cook for 30 minutes, then add chopped garlic. Leave on the stove for 10 minutes and transfer to sterilized jars, then cover with lids and sterilize in a saucepan of water for half an hour. Roll up.

Salad "Nezhinsky"

You will need:

- 3 kg of cucumbers;

- 1.5 kg of onions;

- 200 g of salt;

- 50 g of sugar;

- 50 g vinegar 6%.

Overgrown cucumbers can be used for this salad.

Wash and cut the cucumbers into slices, peel and chop the onion in half rings. Mix everything in a bowl, salt, add sugar. In clean 1 liter. pour jars 1 tbsp each. vegetable oil, add 2 peas of black pepper, put salad, slightly condense, pour again 1 tbsp. vegetable oil and add 1 tbsp each. vinegar.
