Remember that semolina quickly curls up into lumps, so pour the cereal in a thin stream, stirring constantly. Boil the resulting "semolina" for about 15 minutes. Then add granulated sugar and bring to a boil again. Then the mass must be set aside from the fire. In some cases, a gelatin solution is used for fixing. As a result, the dish acquires bright colors and translucency.

Having cooled your fruit mousse to room temperature, we proceed to the most important moment - creating a delicious fruit foam. Pour the fruit puree into the prepared mass and beat with a blender until smooth. Then add the cream and whisk your fruit mousse again until it doubles in volume. Let us remind ourselves that experienced chefs, when whipping dishes, place the container with the mixture in the cold, usually ice. Dip the pot in a bowl of cold water.
