- - 500 ml of milk;
- - 20 g butter;
- - 1 tsp salt.

Step 1
Break the previously washed and dried eggs into a sufficiently deep bowl. Next, the yolks are pierced with a fork, the eggs are mixed until a homogeneous light yellow mass. A nuance that should be remembered precisely when making an omelet like in kindergarten: it is absolutely impossible to beat eggs, especially until the formation of foam. They only need to be stirred well, and only with a fork. A whisk, and even more so a mixer, cannot be helpers here.
Step 2
Then add milk to the egg mass, salt and continue stirring without fanaticism. If you avoid the appearance of lush foam during this process, then when removed from the oven, our omelet will not settle.
Step 3
We heat the oven to 200 degrees. Grease the heat-resistant form to the very edges with butter, pour in the milk-egg mass and place in the oven for a maximum of 15 minutes. Some people manage to cook an omelet for half an hour. But this is nonsense. A “correct” omelet, like in a kindergarten, has a dense structure and a small number of holes, but if you increase the cooking time for an omelet, the structure becomes porous, the number of holes increases, and a lot of liquid appears.
Step 4
When the omelet is ready (it is worth recalling that this happens after 10 minutes, for ovens that do not keep warm - 15), pour it over with melted butter. Incidentally, the velvety texture of the omelet is partly due to the butter. In no case should you replace it with vegetable, unless, of course, you want to get a sole instead of an omelet. Only butter will make the eggs in an omelette silky and soft.
