Step 1

Marinate the meat. To do this, the meat needs to be cut into pieces of about 70-100 grams. Place the meat in a bowl to marinate.

Step 2

Cut the onion into half rings and add it to the meat. You need to take a lot of onions - this way the meat will marinate better, and there will be enough baked onions for everyone.

Step 3

Pour kefir over the meat and onions so that the kefir completely covers the meat.

Step 4

Add barbecue spices to the crockery. Now their choice is huge. You can use your kebab spices or your favorite condiments. By changing the seasonings, you will get a new taste every time. There is no need to salt the meat at this stage! The salt should be added about an hour before charcoal cooking. Toss the meat with onions and spices.

Step 5

Prepare coals (they can be manufactured or left over from burning wood). The coals should be red, there should be no flames. Have a bottle of clean water handy. If a fire appears under the grill with a barbecue, you can quickly extinguish it.

Step 6

Spread the meat and onions evenly over the wire rack and place over the coals. Turning the grill with meat, achieve the same frying of the pieces on all sides. Check the readiness by piercing the meat with a knife - if it is pierced easily, light juice flows, and not blood, the meat lags behind the bone - the barbecue is ready.
