It's hard to find a quicker and lighter pie than a grated one stuffed with sweet jam. It is called grated or curly, because part of the dough, pre-cooled, is rubbed over the filling and as a result, a loose, but beautiful, curly top layer is obtained. Grated pie is an excellent "magic wand" for cases when guests are about to come or you need to add jam.
It is necessary
- • Butter or butter margarine - 1 pack (200 grams)
- • Wheat flour - 600 grams
- • Granulated sugar - 180-220 grams.
- • Chicken egg - 2 pcs.
- • Soda - 0.5-1 tsp.
- • Vinegar (you can use apple cider) - 0.5 tsp. for extinguishing soda
- • Table salt - a pinch
- • For the filling, any jam - 250-300 grams
Instructions
Step 1
The flour must first be sifted into a bowl. Add softened butter or margarine. If the butter is fresh from the freezer, then it can be grated or cut into small pieces directly into the flour. Soda should be quenched with vinegar and stirred thoroughly.
Step 2
Sift granulated sugar into flour, add slaked soda, a pinch of salt and beat in chicken eggs. Combine all ingredients carefully and knead. You can knead with the help of a combine, it is even faster with your hands. Gradually add the measured flour. The result is a non-sticky, shortbread-like dough.
Step 3
Divide the dough into two pieces, not strictly in half, but in a 60:40 ratio. Wrap the smaller part in cellophane and put it in the freezer for about 20-30 minutes. While the dough is cooling, work on the remainder to form the base of the grated pie.
Step 4
Most of them are rolled out and laid out in a mold, while it is desirable to form sides. Spread thick jam or jam on the dough. A chilled smaller piece is taken out of the freezer and rubbed over the filling. The workpiece is placed in an oven preheated to 180 degrees and baked for 30–35 minutes. It is better to cut the cake when it has cooled down a little.
