A delicious and aromatic grated pie with jam is familiar to many of us since childhood. This crumbly pastry with a juicy filling accompanied cozy family teas and intimate conversations.
It is necessary
- 3-3.5 cups flour
- 200 g butter
- 2/3 cup sugar
- 2 eggs
- 2 tbsp. l. mayonnaise
- 1 tsp baking powder
- salt
- 4-5 tbsp preserves, marmalades or jam
Instructions
Step 1
Remove the butter from the refrigerator and leave on the table until it softens.
Step 2
Add sugar to the eggs and beat them into a thick foam with a mixer. Add softened butter and mayonnaise to the beaten eggs and mix well.
Step 3
Sift flour and baking powder. Pour them in small portions into the egg and butter mixture and knead the shortbread dough, which should be tough and elastic.
Step 4
When the dough reaches the desired consistency, mold a ball out of it, wrap it in cling film and place in the refrigerator for 2 hours. If you are short on time and cannot wait 2 hours, the dough ball can be sent to the freezer for 20 minutes.
Step 5
After the specified time has elapsed, remove the dough from the refrigerator or freezer and separate about one third from it. Return less of the dough to the refrigerator.
Step 6
Line a baking dish with parchment, sprinkle with flour and place the remaining dough on it in one lump. Distribute it in shape, pressing and stretching a little with your hands, and form the sides.
Step 7
Spread 4-5 spoons of jam on the dough. If your jam is very liquid, pre-mix it with a little flour or starch.
Step 8
Remove the second part of the shortcrust pastry from the refrigerator and grate it over the jam on a coarse grater.
Step 9
Distribute the grated dough evenly on the cake and place the product in an oven heated to 180 degrees. Bake the cake until golden brown (about 25 minutes).
Step 10
After removing the pie from the oven, let it rest for 3 minutes, then cut into squares.
