Apples are one of the most popular dessert pie fillings. They are inexpensive fruits, available all year round, with minimal pre-processing, and go well with many other ingredients.
Simple apple and cinnamon filling
Apples go well with cinnamon. This aromatic spice gives them not only a characteristic, strong and pleasant aroma, but also a distinct sweetish aftertaste. To make the filling for one open pie you will need:
- 1 kilogram of apples;
- 55 grams of brown cane sugar;
- 30 grams of wheat flour;
- 1 ½ teaspoon of ground cinnamon;
- 80 grams of oatmeal;
- 75 grams of butter.
You will need long-cooked oatmeal, which should be cooked for at least 10-15 minutes.
Peel and core the apples. Cut into 1-1.5 centimeter slices. Combine the cane sugar, sifted flour, cinnamon, and oatmeal in a large bowl. Grate the butter and rub into the mixture. Put the apples on the dough and sprinkle with the resulting crumbs. This cake is baked for about 30-45 minutes and served with whipped cream or a scoop of ice cream.
Apple filling with walnuts
The delicious filling is made from fresh apples and walnuts. Take:
- 4 peeled apples;
- 2 tablespoons of butter;
- 2 teaspoons of lemon juice;
- ½ cup granulated sugar;
- ½ teaspoon ground cinnamon;
- a pinch of nutmeg;
- 1 cup chopped walnuts.
Instead of walnuts, you can use chopped almonds or pistachios.
Cut the apples into small cubes. In a small saucepan, melt the butter, add the lemon juice and add the apples. Cook them over medium heat, stirring occasionally, until the pieces are tender. Add sugar, cinnamon, grated nutmeg, and chopped walnuts. Mix well. The filling is ready.
Spicy apple filling
For Christmas pies, a spicy and thick, aromatic apple filling is often prepared. For her you will need:
- 4 tablespoons of butter;
- 2 large apples;
- ½ cup soft golden raisins;
- ½ cup brown cane sugar;
- 1 lemon;
- 50 ml of rum;
- ½ teaspoon ground cinnamon;
- ¼ teaspoon of ground ginger;
- ¼ teaspoon of salt;
- ¼ teaspoon of ground cloves.
Granny Smith, Braburn, Jonagold and Golden Delicious apples are most suitable for filling in a pie.
Peel the apples, core them and cut into small cubes. Melt butter in a saucepan, add raisins and apples, add lemon zest and squeeze lemon juice, add sugar and season the filling with spices. Cook, stirring occasionally, over low heat for about 30 minutes. Pour in rum, stir, remove from heat and let cool slightly.
