    • 1 medium onion;
    • fresh fennel;
    • 2 stalks of celery;
    • 1 small head of garlic;
    • 1 chili pepper;
    • 1 bell pepper;
    • 3 stalks of asparagus;
    • 200 g green peas;
    • 1 small vegetable marrow;
    • 4-5 fresh tomatoes;
    • 5 tbsp. tomato juice;
    • a bunch of basil or parsley;
    • grated parmesan;
    • salt and pepper.

Instructions

Step 1

Peel the celery stalk from the top hard layer, cut into cubes. Peel and chop the onion. Remove the seeds from the chili and chop it very finely. It is advisable to wear rubber gloves before working with it, as it is very caustic. Mix everything, add chopped fennel there.

Step 2

Heat vegetable oil in a skillet with high sides and fry the mixture in it for 5 minutes. Chop the garlic there before finishing cooking. Simmer all vegetables with garlic for another 2 minutes.

Scald the tomatoes with boiling water, peel them off and chop finely. Alternatively, you can grind them in a food processor. Pour this mass into a frying pan with vegetables, cook for 5-7 minutes. Pour everything into a large saucepan and add tomato juice, bring to a boil, and then cook over medium heat.

Step 4

Prepare leftover vegetables. Cut the bell pepper into strips and fry. Peel and chop the zucchini into cubes. Do the same with the asparagus. Pour everything into the soup, put the peas in the same place. Cook for 10-15 minutes, season with salt and pepper to taste. If the soup seems too thick, add water before removing from heat.

Step 5

Pour the prepared soup into bowls. Serve hot with chopped basil or parsley and Parmesan cheese. You can eat the soup without bread, but if you need it, opt for a whole grain loaf or one that has been baked from wholemeal flour.

Step 6

If you love soups with meat, add chicken fillet to the main recipe. To do this, cut it into cubes and fry it together in the first serving of vegetables.

Step 7

The soup will become more satisfying, but also more high-calorie with the addition of beans. To do this, 10 minutes before the end of cooking, add red or white canned beans to the soup, after draining the liquid.
