    • Tomato juice (1 l):
    • 1 kg of tomatoes;
    • salt and sugar to taste.

Step 1

Tomato puree soup

Wash the tomatoes and make shallow cross-shaped cuts in each tomato (at the base). Place the tomatoes in a bowl and pour boiling water over them for 1-2 minutes. As soon as the corners of the cut skin begin to curl, drain the boiling water, float the tomatoes with cold water and remove the skin by pulling the corners with the blunt side of a knife.

Cut the tomatoes into cubes. Peel the onion, garlic and finely chop. Heat a skillet with vegetable oil and fry the onions and garlic until golden brown.

Boil water or vegetable broth, salt and add chopped tomatoes, fried onions and garlic. Add greens (no chopping required). Let the soup simmer for three minutes.

Remove the tomatoes and herbs with a slotted spoon. Rub the tomatoes through a sieve and pour into bowls. Chop the herbs and sprinkle over the tomato soup.

Put the resulting tomato juice on fire and add salt and sugar to taste. After boiling, cook the juice for 15-20 minutes.

Wash and sterilize glass jars. Pour boiling tomato juice into them and tighten with pre-boiled lids. Place the jars with the lids down and let cool.

Store the tomato juice. It should be stored in a dark and cool room at an optimum temperature of 10-12 ° C.
