Squid are affordable and easy to prepare seafood. They go well with a wide variety of foods - rice, vegetables, noodles - and are suitable for both a holiday and a regular daily lunch.
Paella
This traditional Spanish dish takes a long time to prepare, but the result will please you. This recipe successfully combines seafood and meat. Although paella has a fairly high calorie content, such food is not heavy on the stomach, and seafood will provide health benefits due to the content of iodine and other valuable microelements in them.
You will need:
- 400 g of rice;
- 1 kg of mussels in shells;
- 1 tbsp. dry white wine;
- 30 g butter;
- 200 g shrimp;
- 200 g chorizo sausage;
- 200 g of fresh frozen squid;
- 100 g frozen green peas;
- 300 g chicken fillet;
- 1 onion;
- 5 tomatoes;
- 1 bell pepper;
- a pinch of saffron;
- olive oil;
- salt and freshly ground black pepper.
If you don't have chorizo, replace it with raw smoked sausage or add more chicken to the dish.
Wash the mussels. Place them in a saucepan along with butter, top with wine and cook until shells open. Dice the chicken fillet. Heat olive oil in a skillet and fry the meat in it for 5 minutes. Set aside in a separate bowl. Peel the bell pepper from seeds and partitions, cut into strips. Chop the peeled onion. Fry in a deep skillet for 7-8 minutes, then add rice and chorizo slices to the vegetables. Fry, stirring occasionally, for a couple more minutes. Pour the tomatoes over with boiling water, remove the skin from them, and chop the pulp and add to the rice along with chopped garlic and saffron. Pour the liquid left over from cooking mussels into the pan. also add 4 tbsp. warm water, salt and pepper, stir and cook for 25-30 minutes, covered with a lid. 10 minutes before the end of cooking, add the green peas, the squid rings, the peeled and boiled shrimp, and half of the mussels removed from the shells. Garnish with the remaining mussels in the shells when serving.
Squid with noodles in tomato sauce
You will need:
- 500 g squid;
- 400 g of spaghetti;
- 1 onion;
- 2-3 cloves of garlic;
- olive oil;
- 3 tomatoes;
- 1 tbsp. Sahara;
- 1/2 tbsp. dry white wine;
- 1 tbsp. cognac;
- 1 tbsp. sour cream;
- salt and freshly ground black pepper.
Squids according to this recipe can be served with both rice and boiled potatoes.
Peel and chop the onion and garlic. Fry them in olive oil, then add chopped tomatoes, wine and sugar to the pan, season with salt and pepper. Simmer the sauce over medium heat for 15 minutes. Cut the squid into rings. In a separate skillet, combine the cognac and 1 tbsp. olive oil, fry the squid rings in this mixture. Transfer them to the tomato sauce and cook for another 5-7 minutes. Add sour cream at the end of cooking. Boil the spaghetti in salted water. Serve the noodles with squid and sauce.
