Cupcakes are a delicious dessert originally from America. Although they have been known in the United States since the late 18th century, cupcakes have gained worldwide popularity only recently, thanks to the TV series Sex and the City.
Cupcakes are small, delicious cakes that are very beautiful to look at. Despite the fact that the appearance of the cupcakes resemble muffins and muffins, their taste is quite different. The dough for cupcakes is much softer, it can be compared to a traditional biscuit, which is baked for cakes. Another distinctive feature is the creamy cap, which gives the baked goods a zest and flavor.
From English, cupcake literally translates as "cup cake"; in English-speaking countries, pastries are also known as fairy cake - "fairy cake".
To make cupcakes with cream, you will need: 200 g of wheat flour, 300 g of butter, 350 g of granulated sugar, 120 ml of milk, 7 chicken eggs, 1 tbsp. l. lemon juice, 1 tsp. baking powder, 2 g of food coloring, a pinch of salt, vanillin.
There are a huge number of cupcake recipes, you can even come up with them yourself. Do not be afraid to add cocoa, chocolate, spices, pieces of fruit and candied fruits to the dough. You can also experiment with cream.
To make delicious cupcakes, prepare the ingredients for the dough first. Take a large deep bowl and put 100 grams of butter in it, add 150 grams of granulated sugar to the butter. Using a mixer, beat the food until smooth and fluffy. Add to this mass 2 chicken eggs, a pinch of vanillin and a pinch of salt. Whisk the ingredients again until smooth.
Sift wheat flour and baking powder into a bowl of butter. Mix the dough thoroughly. Then add the required amount of milk to it, mix everything until smooth.
Take a muffin and cupcake baking dish. Lubricate each indentation with vegetable oil and place baking paper formed for this type of baking into it. Divide the dough into molds. Preheat the oven to 175o, bake cupcakes in it for 25-30 minutes. Prepare the cream at this time.
Take the leftover chicken eggs and separate the whites from the yolks. Place the egg whites in a medium bowl. Add 200 grams of granulated sugar to them, put the container in a water bath. While stirring constantly, melt the sugar in the egg whites in a water bath until it is completely dissolved.
Next, remove the bowl with the mixture from the heat, beat the sweet proteins with a mixer until stable peaks. Add lemon juice to the fluffy mass. While beating the whites, start adding 200 grams of softened butter and food coloring to them. Put the finished cream in the refrigerator for 60 minutes.
Remove cupcakes from oven and cool to room temperature. When the cream has cooled enough, remove it from the refrigerator and place it in a piping bag. Place the colored cream on top of each cupcake. Optionally, you can decorate the baked goods with coconut flakes, chocolate chips, nuts, candied fruits or confectionery beads.
Cream cupcakes are ready! Serve baked goods with hot tea.
