Step 1

Wash the chicken well. Remove the feather stumps and trim off excess fat. Rub the outside and inside of the chicken with salt and ground black pepper. Cover or wrap in plastic wrap and refrigerate for 3-4 hours to soak.

Boil water in a large saucepan and season with salt. Put peeled potatoes, a head of garlic and a whole lemon in it. Boil it all for about 10-12 minutes.
